October can be a cold month and there’s nothing nicer to come home to than a steaming bowl of soup… and this one is absolutely delicious!

Hint of mint pea soup

Ingredients:

2 tablespoons olive oil
1 leek, finely sliced
1 garlic clove, crushed
1 litre (1¾ pints) vegetable or chicken stock
1 round lettuce, finely sliced
150g (5oz) fresh or frozen peas
1 teaspoon sugar
20 mint leaves
Salt and freshly ground black pepper
50g (2oz) grated Parmesan cheese
Cream or crème fraîche to serve

Method:

1. Put the oil, leek and garlic into a large saucepan and sauté until the leek is soft
2. Add the stock, lettuce and peas and bring to the boil
3. Reduce the heat and simmer for 15 minutes, or until the peas are soft
4. Remove the pan from the heat and add the sugar and mint leaves
5. Blend the soup in a blender or food processor until smooth and season to taste
6. Pour the soup into bowls and sprinkle some of the Parmesan cheese on top
7. Add a swirl of cream or crème fraîche before serving
