Fed up with leftovers… don’t want to see another turkey for 12 months? then try this delicious and simple salmon recipe :-

 

Ingredients:

Side of fresh salmon, skinned and boned
Salt and freshly ground black pepper
Mayonnaise
225g (8oz) shelled pecan nuts
4 tablespoons snipped chives
25g (½ oz) unsalted butter, melted
Lemon or Lime to serve

Method:

1. Wash and dry the salmon (either leave whole or cut into portions) and place on a greased or lined baking tray
2. Season to taste
3. Spread a thin layer of mayonnaise over the top of the salmon
4. Grind the nuts then mix in the butter and chives
5. Carefully spread the nut mixture over the salmon and pat into place
6. Bake at 180°C/350°F/Gas Mark 4 for approx. 20 minutes
7. Carefully remove from the oven and transfer to a long plate or dish and decorate with either lemon or lime wedges

Serve with new or mashed potatoes and vegetables or green salad of your choice. This salmon is delicious hot or cold.
