Not everyone loves Christmas Pudding but who can resist trifle! This lovely easy to make recipe combines seasonal spices along with all the usual luscious trifle ingredients… just take a look :-
Ingredients:
225g (8 oz) fresh or dried cranberries
3 large oranges, peeled and sliced
4 tangerines, divided into segments
1½ teaspoons mixed spice
1½ teaspoons ginger
1½ teaspoons cinnamon
568ml (1 pint) custard (make in the usual way or buy ready made)
2 ready made jam swiss rolls, sliced
285ml (½ pint) whipping cream – whipped
Dried cranberries and chocolate flake to decorate
Method:
1. Mix together the cranberries, oranges and tangerines with the mixed spice, ginger and cinnamon and place in an even layer in a casserole dish
2. Preheat the oven (180ºC/350ºF/Fas Mark 4) and cook the fruit for 20 minutes then remove from the oven and leave to cool completely. Drain the fruit but keep some of the juice
3. Make a pint of custard in the usual way and leave in the fridge to cool
4. Place the swiss roll slices over the base and partly up the sides of a large glass bowl and cover with the cold fruit and a little of the reserved juice
5. Pour over the custard and leave in the fridge to set
6. Spread the whipped cream over the top
7. Decorate with the chocolate flake and dried cranberries for a festive look
This is a great dessert to make a day in advance
