As chocolate is most definitely flavour of the month, we thought we’d incorporate it into our recipe… these fabulous little tarts are a real party piece and ideal to make for any special gathering…a treat for Mother’s Day or perhaps for family and friends over Easter and they couldn’t be easier…

Ingredients

8 ready made individual tartlet cases
110g (4oz) dark chocolate (melted)
600ml (1 pint) thick custard or crème patisserie
2 punnets of raspberries (or strawberries, blueberries etc.)
Pouring cream to serve

Method

  1. Spread (or use a pastry brush) the melted chocolate inside each of the pastry cases and leave to set
  2. Once the chocolate has set, fill each pastry case with the custard or crème patisserie
  3. Top each tartlet with a generous helping of the fruit
  4. Serve with a little fresh pouring cream
