Who doesn’t love pancakes… sweet or savoury, they’re worth breaking the diet for!
Our recipe this month is some easy to make pancakes that you can serve with your family’s favourite sweet toppings :-
INGREDIENTS
200g (7oz) plain flour
½ teaspoon salt
4 teaspoons baking powder
1 tablespoon caster sugar
2 eggs
220ml (7 fl oz) milk
5 tablespoons unsalted butter, melted + a little extra for cooking

In a bowl, sift together the flour, salt and baking powder then stir in the sugar

Beat together the eggs with the milk and melted butter

Pour the egg mixture into the flour and stir very lightly until all the ingredients are just combined

Rub a small frying pan with a little of the extra butter and heat the pan

Pour 3-4 tablespoons of the batter into the pan and tilt so that the batter covers the base evenly and turn the heat down to medium

Cook until a few bubbles come to the surface and turn the pancake over, cooking for about a minute

Repeat with the remainder of the batter, greasing the pan when necessary

Serve the pancakes hot, dressed with your favourite fruits, jams, chocolate spread, syrup, cream or ice cream
(makes between 6 and 10 depending on the size of your pan)
