For a filling and warming meal if you’re having a Hallowe’en party or going out Trick or Treating, why not try this delicious easy curry… once prepared just cook for 1½-2 hours and it is ready whenever you are :-
Ingredients:

2 tablespoons vegetable oil

2 medium onions, finely chopped

2 teaspoons grated ginger

1 clove garlic, chopped

2 teaspoons salt

1 teaspoon turmeric
-
3 teaspoons garam masala
-
2 teaspoons ground coriander
-
2 teaspoons ground cumin
-
1 teaspoon mild chilli powder

680g (1½ lb) leg of lamb, chopped into bite sized chunks

300g (11 oz) peeled chopped plum tomatoes
-
2 dessertspoons of plain yogurt

Bunch of chopped fresh coriander
Method:

Heat the oil in a saucepan until very hot and fry the onions until soft and translucent

Add the ginger and garlic and keep frying for a couple of minutes

Add the salt, turmeric, garam masala, coriander, cumin and chilli and fry for a few more minutes

Add the lamb and continue stirring on a medium to high heat until the meat has fully browned

Add the tomatoes and stir for another five minutes before adding the plain yogurt

Bring to the boil, cover the pan then lower the heat and simmer for 1½-2 hours, stirring every 30 minutes until the consistency is thick and a reddish brown colour

Remove from the heat and stir in the coriander

Leave to rest for 5 minutes with the lid on and adjust the seasoning if necessary

Serve with rice and naan bread
